Spicy Roasted Chickpeas:
Ingredients:
- 2 cans chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper (adjust to taste)
Instructions:
- Preheat your oven to 400°F (200°C).
- Spread the chickpeas on a clean kitchen towel and pat dry to remove any excess moisture.
- In a mixing bowl, whisk together olive oil, cumin, paprika, garlic powder, salt, and cayenne pepper.
- Add the chickpeas to the bowl and toss well to coat them evenly with the spice mixture.
- Spread the chickpeas in a single layer on a baking sheet lined with parchment paper.
