CHICKEN DUM BIRIYANI

INGREDIENTS

    1. Rice-                                 2 Cups
    2. Water-                              4 Cups
    3. Chicken-                           2 Cups
    4. Onions-                             3 
    5. Garlic and Ginger Paste- 3 tsp
    6. Tomatos-                          3
    7. Coriander Leaves-           1 cup
    8. Coriander Powder-          2 tsp
    9. Turmeric Powder-            1/2 tsp
    10. Chilly Powder-                  2 tsp
    11. Kashmiri Chilly Powder-  1 tsp
    12. Garam Masala-                1 tsp
    13. Chicken Masala-              1 tsp
    14. Cashew Nuts and Kismis- 1/2 cup
    15. Salt-                                    To Taste
    16. Lemon-                               1
    17. Black Pepper kernels-       7-8 nos
    18. Cardamom, Clove and Cinnamon-  4-5 nos
    19. Oil- 2 tbsp
    20. Mustard Seeds- 1 tsp 

INSTRUCTIONS

  1. Take 2 cups of Basmati rice, wash and soak in water for about 20 mins. Mean while, take 4 cups of water in a deep bottom pan, add 1 tsp oil, 1/2 lemon juice, 1 tsp salt, few numbers of Cloves, Pepper kernels, Cardamom and Cinnamon. Can add other spices whichever u have like, bay leaves, star anise, etc.
    Let it boil.
     

2. Drain rice completely and add to pan when water comes to boil. Stir occasionally to avoid getting sticked to the bottom of pan. Cook till the water gets fully absorbed. 



3.  Spread nicely cooked rice over another plate to avoid getting sticked up.



4. Take a pan, add 2 tbsp oil. To it add 1 tsp mustard seeds, after it crackle, add 3 tsp of ginger garlic paste. Cook for 2 minutes. Thereafter add chopped onions to it and salt (To Taste) and cook till onions becomes mashy.



5. Now add 2 tsp Coriander Powder, 2 tsp Chilly Powder, 1/2 tsp Turmeric Powder, 1 tsp Garam Masala, 1 tsp Chicken masala,  1 tsp Kashmiri Chilly Powder, 1/2 lemon juice and salt as per taste. Mix well and let it  cook for 5-10 mins.


6. Now add 2 cups of chopped chicken pieces and 2 chopped tomatoes, mix nicely and cover with a lid and cook for another 10 mins.

7. In a mixer jar, take one tomato and 1/2 cup coriander leaves, make a smooth puree. Add this to the chicken curry and cook with closed lid for 5 mins.



8. Make sure u don't add water to the chicken as when    u  cook with lid closed, chicken and the tomatoes will    leave excess water which is enough to cook chicken  completely. 
Remove the lid and cook till the gravy thickens and  the  water gets absorbed. 


9. Once the gravy is ready, layer it with cooked rice and  mix loosely. Close with lid and cook in low flame for another  5-10 mins,  so it gets evenly mixed.


10. Garnish with coriander leaves and serve with curd         salad.
