MATAR PULAV | GREEN PEAS PULAV





 

Here is a recipe for Matar Pulav, a fragrant rice dish with green peas that's popular in Indian cuisine:

Ingredients:

  • 2 cups Basmati rice
  • 3 cups water
  • 1 cup green peas (fresh or frozen)
  • 1 onion, thinly sliced
  • 2-3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2-3 green chillies, finely chopped
  • 1 teaspoon cumin seeds
  • 2-3 cardamom pods
  • 1 cinnamon stick
  • 2-3 cloves
  • 1 bay leaf
  • 2 tablespoons oil or ghee
  • Salt to taste
  • Chopped coriander leaves for garnishing

Instructions:

  1. Wash the rice thoroughly and soak it in water for 30 minutes. Drain the water and keep the rice aside.

  2. In a pot, heat oil or ghee on medium heat. Add cumin seeds, cardamom pods, cinnamon stick, cloves, and bay leaf. Fry until fragrant, for about 1-2 minutes.

  3. Add sliced onions, garlic, ginger, and green chillies. Fry until the onions are soft and translucent.

  4. Add the green peas and fry for a minute or two until they are cooked.

  5. Add the soaked rice and fry for a few minutes until the rice is coated with oil or ghee and well mixed with the other ingredients.

  6. Add water and salt to taste. Bring it to a boil and then reduce the heat to low. Cover the pot with a tight-fitting lid and let it cook for about 15-20 minutes until the water is absorbed and the rice is cooked.

  7. Once done, turn off the heat and let the rice sit for 10 minutes covered.

  8. Remove the lid, fluff the rice with a fork, and garnish with chopped coriander leaves. Serve hot with raita, pickle or any curry of your choice.
