MATAR PULAV | GREEN PEAS PULAV
Here is a recipe for Matar Pulav, a fragrant rice dish with green peas that's popular in Indian cuisine:
Ingredients:
- 2 cups Basmati rice
- 3 cups water
- 1 cup green peas (fresh or frozen)
- 1 onion, thinly sliced
- 2-3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2-3 green chillies, finely chopped
- 1 teaspoon cumin seeds
- 2-3 cardamom pods
- 1 cinnamon stick
- 2-3 cloves
- 1 bay leaf
- 2 tablespoons oil or ghee
- Salt to taste
- Chopped coriander leaves for garnishing
Instructions:
- Wash the rice thoroughly and soak it in water for 30 minutes. Drain the water and keep the rice aside.
- In a pot, heat oil or ghee on medium heat. Add cumin seeds, cardamom pods, cinnamon stick, cloves, and bay leaf. Fry until fragrant, for about 1-2 minutes.
- Add sliced onions, garlic, ginger, and green chillies. Fry until the onions are soft and translucent.
- Add the green peas and fry for a minute or two until they are cooked.
- Add the soaked rice and fry for a few minutes until the rice is coated with oil or ghee and well mixed with the other ingredients.
- Add water and salt to taste. Bring it to a boil and then reduce the heat to low. Cover the pot with a tight-fitting lid and let it cook for about 15-20 minutes until the water is absorbed and the rice is cooked.
- Once done, turn off the heat and let the rice sit for 10 minutes covered.
- Remove the lid, fluff the rice with a fork, and garnish with chopped coriander leaves. Serve hot with raita, pickle or any curry of your choice.
