KADAI PANEER

Kadai paneer is a spicy and flavourful dish from North India that's made with paneer (a type of cheese), capsicum (bell peppers), onions, and a blend of aromatic spices. 



Here's a recipe to make it at home:


Ingredients:


  • 250 grams paneer, cut into cubes

  • 2 medium-sized onions, roughly chopped

  • 2 medium-sized capsicums, diced

  • 1 cup green peas

  • 3-4 tomatoes, roughly chopped

  • 1-inch piece of ginger, grated

  • 3-4 garlic cloves, minced

  • 2 green chilies, slit lengthwise

  • 1 tablespoon coriander seeds

  • 1 tablespoon cumin seeds

  • 1 teaspoon fennel seeds

  • 1 teaspoon black peppercorns

  • 2-3 dried red chilies

  • 1/2 teaspoon turmeric powder

  • 1 tablespoon Kashmiri chili powder

  • 1 tablespoon garam masala powder

  • Salt, to taste

  • 2 tablespoons oil

  • Chopped coriander leaves, for garnish


Instructions:


  1. Dry roast coriander seeds, cumin seeds, fennel seeds, black peppercorns, and dried red chilies in a pan until fragrant. Grind them into a fine powder and keep it aside.

  2. In a pan, heat 1 tablespoon of oil and sauté the paneer cubes until golden brown. Remove from the pan and keep them aside.

  3. In the same pan, add another tablespoon of oil and sauté the chopped onions until they turn translucent.

  4. Add grated ginger, minced garlic, green peas, and slit green chilies to the pan and sauté for 1-2 minutes until fragrant.

  5. Add the diced capsicums to the pan and stir well. Cook for 2-3 minutes until they become tender.

  6. Add the roughly chopped tomatoes to the pan and stir well. Cook for 2-3 minutes until the mixture thickens slightly.

  7. Add turmeric powder, Kashmiri chili powder, and the ground spice powder to the pan and mix well.

  8. Add salt to taste and mix well.

  9. Add the sautéed paneer cubes to the pan and gently mix them with the gravy.

  10. Cover the pan and let the paneer cook in the gravy for 2-3 minutes.

  11. Add garam masala powder to the pan and mix well.

  12. Garnish with chopped coriander leaves and serve hot with roti, naan, or rice.
