KADAI PANEER
Kadai paneer is a spicy and flavourful dish from North India that's made with paneer (a type of cheese), capsicum (bell peppers), onions, and a blend of aromatic spices.
Here's a recipe to make it at home:
Ingredients:
- 250 grams paneer, cut into cubes
- 2 medium-sized onions, roughly chopped
- 2 medium-sized capsicums, diced
- 1 cup green peas
- 3-4 tomatoes, roughly chopped
- 1-inch piece of ginger, grated
- 3-4 garlic cloves, minced
- 2 green chilies, slit lengthwise
- 1 tablespoon coriander seeds
- 1 tablespoon cumin seeds
- 1 teaspoon fennel seeds
- 1 teaspoon black peppercorns
- 2-3 dried red chilies
- 1/2 teaspoon turmeric powder
- 1 tablespoon Kashmiri chili powder
- 1 tablespoon garam masala powder
- Salt, to taste
- 2 tablespoons oil
- Chopped coriander leaves, for garnish
Instructions:
- Dry roast coriander seeds, cumin seeds, fennel seeds, black peppercorns, and dried red chilies in a pan until fragrant. Grind them into a fine powder and keep it aside.
- In a pan, heat 1 tablespoon of oil and sauté the paneer cubes until golden brown. Remove from the pan and keep them aside.
- In the same pan, add another tablespoon of oil and sauté the chopped onions until they turn translucent.
- Add grated ginger, minced garlic, green peas, and slit green chilies to the pan and sauté for 1-2 minutes until fragrant.
- Add the diced capsicums to the pan and stir well. Cook for 2-3 minutes until they become tender.
- Add the roughly chopped tomatoes to the pan and stir well. Cook for 2-3 minutes until the mixture thickens slightly.
- Add turmeric powder, Kashmiri chili powder, and the ground spice powder to the pan and mix well.
- Add salt to taste and mix well.
- Add the sautéed paneer cubes to the pan and gently mix them with the gravy.
- Cover the pan and let the paneer cook in the gravy for 2-3 minutes.
- Add garam masala powder to the pan and mix well.
- Garnish with chopped coriander leaves and serve hot with roti, naan, or rice.
