Creamy Tomato Basil Soup Recipe

Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cans (28 ounces each) whole peeled tomatoes, undrained
- 2 cups chicken or vegetable broth
- 1 cup heavy cream
- 1/4 cup chopped fresh basil leaves
- Salt and pepper to taste
Instructions:
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for an additional 30 seconds.
- Add the cans of whole peeled tomatoes to the pot. Use a potato masher to break the tomatoes into smaller pieces. Cook for 10-15 minutes, stirring occasionally.
- Add the chicken or vegetable broth to the pot and bring to a simmer. Reduce heat to low and let the soup simmer for 15-20 minutes.
- Remove the soup from heat and use an immersion blender or transfer the soup to a blender in batches and puree until smooth.
- Return the pureed soup to the pot and stir in the heavy cream and chopped basil leaves. Season with salt and pepper to taste.
- Bring the soup back to a simmer and cook for an additional 5-10 minutes, stirring occasionally.
- Serve hot with a drizzle of olive oil and additional chopped basil for garnish.
Tips:
For a thicker soup, add a can of tomato paste when you add the canned tomatoes.
If you don't have an immersion blender, be sure to let the soup cool slightly before blending in a regular blender. Blend in batches and use caution when blending hot liquids.
This soup can be made ahead of time and stored in the refrigerator for up to 3 days. Reheat in a pot over medium heat, stirring occasionally.
