Creamy Tomato Basil Soup Recipe

This creamy tomato basil soup recipe is a classic comfort food that is perfect for any time of the year. It’s easy to make and packed with delicious flavors that will satisfy any craving. With just a few simple ingredients, you can create a soup that is rich, flavourful, and oh-so-delicious.


Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cans (28 ounces each) whole peeled tomatoes, undrained
  • 2 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1/4 cup chopped fresh basil leaves
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for an additional 30 seconds.
  2. Add the cans of whole peeled tomatoes to the pot. Use a potato masher to break the tomatoes into smaller pieces. Cook for 10-15 minutes, stirring occasionally.
  3. Add the chicken or vegetable broth to the pot and bring to a simmer. Reduce heat to low and let the soup simmer for 15-20 minutes.
  4. Remove the soup from heat and use an immersion blender or transfer the soup to a blender in batches and puree until smooth.
  5. Return the pureed soup to the pot and stir in the heavy cream and chopped basil leaves. Season with salt and pepper to taste.
  6. Bring the soup back to a simmer and cook for an additional 5-10 minutes, stirring occasionally.
  7. Serve hot with a drizzle of olive oil and additional chopped basil for garnish.


Tips:

For a thicker soup, add a can of tomato paste when you add the canned tomatoes.

If you don't have an immersion blender, be sure to let the soup cool slightly before blending in a regular blender. Blend in batches and use caution when blending hot liquids.

This soup can be made ahead of time and stored in the refrigerator for up to 3 days. Reheat in a pot over medium heat, stirring occasionally.
