KESAR PHIRNI | GOODNESS LOADED PHIRNI | HEALTHY SWEET DISH | DRY FRUIT PHIRNI

This is a sweet dish/ pudding made with the goodness of Rice, Milk, Saffron and Healthy Nuts. Since this recipe was made for an occasion with 30 servings, the instructions are explained accordingly. Still, I will also be mentioning the proper ingredients for 4 Servings as well.

INSTRUCTIONS       
(For 30 Servings)                                            

1. Rice                     10 Tsp                                   
2. Milk                      5  litres
3. Sugar                   2 Cup                                  
4. Saffron                100 gms                             
5. Cardamom         10
6. Pista                    1/2 Cup                              
7. Cashew Nuts      1 Cup 
8. Badam                1 Cup                                 

  INSTRUCTIONS(For 4 Servings)

1. Rice                    2 Tsp

2. Milk                    1 Litre 

3. Sugar                 6 Tsp 

4. Saffron               10-20

5. Cardamom        

6. Pista                   10-15 Chopped

7. Cashew Nuts      1/2 Cup

8. Badam                1/2 Cup

 INSTRUCTIONS [For 30 Servings] 

1.  Take 10 Tsp of Basmati Rice. Wash throughly and soak it in water for 20 mins.



2. Mean time, heat 5 litre milk in a round bottom pan. When it comes to boil, heat for another 10-15 mins in low to medium flame until it gets reduced by a little. Stir occasionally.



3. Soak few Cashew nuts in hot water for 15 mins and make a smooth paste of it. Keep aside.


4. Take few strands of Saffron and soak it in 3 Tsp hot milk & Keep aside.



5.  Take 2 cups of sugar with 10 cardamom seeds. Grind it to fine powder.




6. Now discard excess water and paste the soaked rice to smooth paste.


7. Add rice paste slowly into boiling milk. Stir continuously to avoid getting sticked to the bottom of vessel. Now add cashew paste, chopped Badam, Pista & saffron milk.  Cook till it thickens or reduced to half.



8. Keep aside and let it cool down. Later serve in separate cups, garnish with left over chopped nuts and keep it in refrigerator for 2 hours. Serve chilled.
