 INGREDIENTS

  1. Brinjal-                       8-9 Nos (Medium Size)
  2. Onion-                        2
  3. Tomatoes-                 2
  4. Ginger/Garlic Paste- 2 Tsp
  5. Green Chillies-            2-3 nos
  6. Coriander Powder-    2 tsp
  7. Chilly Powder-            2 Tsp
  8. Turmeric Powder-      1 Tsp
  9. Pepper Powder-        1/2 Tsp
  10. Garam Masala-         1/2 Tsp
  11. Salt-                           To Taste
  12. Oil-                             1 Tbsp
  13. Cumin Seeds-            1/2 Tsp
  14. Coriander Leaves-    1/2 Cup

INSTRUCTION

1. Take about 8-9 medium sized Brinjal and roast it over stove until cooked from inside.



2. Keep aside roasted brinjal to cool down.



3. In a pan, add 1 Tbsp oil. To it add 1/2 Tsp of Cumin Seeds, and then add 2 Tsp of crushed Ginger/ Garlic. Let it cook for couple of 



4. Now add finely chopped onions and cook until onion becomes soft.


                  


5. Now add 1  Tsp Turmeric Powder, 2 Tsp coriander powder, 2 Tsp chilly powder, 1/2 Tsp garam masala, Salt, and 1/2 Tsp pepper powder. Mix well and cook until aromatic.

    

6. Add 2 chopped tomatoes to it.

                   


7. Now peel off roasted brinjal and mash it with a fork. Add mashed brinjal with the prepared gravy and mix well. Cook for 5-10 Mins .

                   

8. Garnish with coriander leaves and serve hot with Chapathis or Tandoori Roti.
