TAWA BINDI




INGREDIENTS

  • Bhindi/ Ladies Finger ----------------- 10 nos 
  • Onion ---------------------------------------- 1  
  • Shallots --------------------------------- 8 nos 
  • Ginger ------------------------------- 1/2 piece
  • Garlic ---------------------------------- 7-8 nos 
  • Chillis ---------------------------------- 2 small 
  • Curd ------------------------------------ 2 tbsp 
  • Lime Juice ------------------------------- 1 tsp 
  • Turmeric --------------------------------- 1 tsp 
  • Salt ----------------------------------- To Taste 
  • Pepper Powder -------------------------- 1 tsp 
  • Chilli Powder ---------------------------- 2 tsp 
  • Fennel Seeds ---------------------------- 1 tsp 
  • Kalonji --------------------------------- 1/2 tsp 
  • Cumin Seed --------------------------- 1/2 tsp 
  • Coriander Powder ---------------------- 2 tsp 
  • Cardamom ---------------------------  2 pods 
  • Cinnamon ----------------------------- 2 small 
  • Oil ---------------------------------------- 1 tbsp



                                       INSTRUCTIONS

                                      1.  Wash Bhindi throughly and pat dry.



                                      2.  When it is completely dried chop bhindi into equal sized pieces.





                                      3. Make slit on each of the chopped ladies finger.




                                      4. Now take 7-8 shallots, 2 parts of ginger, 6-7 garlic , few chillies in a mixer grinder.




                                      5. To it  above grinded pasteadd 1 tsp fennel seeds, 1/2 tsp cumin seeds, 2 parts of cinnamon, 2 -3 pods of cardamom, 1/2 tsp Kalonji and grind to a smooth paste. Keep aside.



                                      6.  In a bowl, take 2 tbsp of Curd, 1 tsp turmeric, 2 chilli powder, 1 tsp pepper powder, prepared masala paste, 1 tsp lime juice and 2 tsp coriander powder. Mix well without any lumps, and add chopped ladies finger and roughly chopped onions to it. Marinate and refrigerate for 30 mins.





                                      7.  Now take a pan, add oil 1 tbsp oil. To it add the marinated vegetables and add 1/2 water. Close with a lid and cook for 10 mins. You can add 1/2 fresh cup cream or milk, that will enhance its taste.




                                      8. Garnish with kasuri methi leaves and serve hot.
