EGGLESS COFFEE CAKE



Ingredients 

All Purpose Flour - 2 Cups

❥ Powdered Sugar ( Icing Sugar)- 1 Cup

❥ Butter- 1 Cup

❥ Milk- 1/4 Cup

❥ Baking Powder- 1 tsp

❥ Baking Soda- 1/2 tsp

❥ Whipping Cream- 1 Cup

❥ Fresh Cream- 1 Cup

❥ Vanilla Essence- 1 tsp


For making Coffee Cream:

❥ Coffee- 3 tsp

❥ Hot water- 3 tsp

❥ Sugar -3 tsp


For Icing

❥ Take 1 cup Whipping Cream in a bowl and beat it well until stiff peaks are formed.

❥ Take the Whipping cream in two different bowl. In one bowl mix Coffee Cream (mentioned above) to it. 


METHOD

1.) Lets prepare Coffee cream first. In a bowl , put together all the three ingredients ( Coffee, Hot Water & Sugar). Whisk vigorously till the mixture turns smooth , fluffy and forms stiff peaks. If using Hand whisker, it would take you about 10 mins. Keep this Coffee Cream aside.

2.) In a bowl, mix together all purpose flour, powdered sugar , vanilla essence, milk, baking soda and baking powder. To it add 1 cup fresh cream, 1 cup melted butter & Coffee Cream. Mix well until smooth silky texture. Keep aside.

3.) Preheat the Oven at 180 degree Celsius. Grease the pan with butter. Pour the cake batter and bake for 25-30 mins. Cook till the wooden pick comes out clean after inserting in the centre of the cake.  

4.) Cut the cake into three layer after the cake gets to normal temperature. Prepare sugar syrup and brush it on to the cake layers and keep aside.

 5.) Layer plain white Whipping cream over each layer of the cake. Thereafter layer another cream prepared with added coffee cream and level it well over the cake surface & its side. 

6.) Lastly, i used caramel sauce and chocolate sauce to decorate the cake .
